Goat's milk forms a softer curd in the stomach due to its lower Alpha-S1 Casein content, a common dairy protein. This makes it easier to digest compared to cow's milk. The softer the curd, the faster the digestion rate. Additionally, goat's milk has smaller fat globules, further aiding in digestion.
Unique Protein and Fat Profile
Goat's milk contains more Medium Chain Triglycerides (MCTs), a type of fat that is easy to digest. It primarily consists of A2 Beta-Casein protein, unlike cow's milk which contains both A1 and A2 proteins. Research suggests that A1 protein can cause inflammatory responses in some individuals. Goat's milk has only 5.6% A1 protein compared to 38% in cow's milk.
