Miso Carrot Dip

INGREDIENTS

3 carrots peeled and sliced.
3 Tbsp cooking oil
2 cloves garlic, crushed.
1/2 tsp ground cumin
1/2 tsp ginger
4 Tbsp water, plus more if required.
1 can of cannellini beans drained and rinsed.
2 Tbsp miso paste
2 Tbsp lemon juice
Sesame seeds to garnish.

TO SERVE:
1/2 block of goat’s feta
Seeded crackers.

DIRECTIONS

Put the carrots, oil, garlic, spices, and water in a medium saucepan over a medium heat. Cover with a lid to create a sweat and cook gently, stirring occasionally, until the carrots are tender. Add an extra water during cooking if needed so that it does not stick to the bottom.

Stir in the cannellini beans to heat through. Add the miso paste and lemon juice. Use a blender or handheld blender and process until smooth and light in texture. Season with salt and pepper. Adjust to taste if needed.

Spoon onto a dish for serving, top with sesame seeds. Enjoy with vege sticks or seeded crackers and goats’ feta!
